The Boffard Gran Reserva is a Spanish pressed cheese made only from ewe’s spring milk, when the quality of the milk is at its best thanks to the aromas imparted by the rustic pastures. When the cheeses matures, the rind is rubbed with extra virgin olive which slowly penetrates the cheese and protects it from impurities. The oil also contributes to its unique taste. This Boffard Gran Reserva cheese has become a legendary product, and is the only one bearing the royal coat of arms. Since 1882, every year on the 19th December, edition 0 of the 18-month old Boffard Gran Reserva is sent to the King himself. During the maturation, the cheeses destined for the Gran Reserva classification are personally monitored by the cellar master. Only the best wheels are selected before being left to mature for 18 months. They will only be sold at the end of the year. This exceptional cheese comes in an attractive wooden box.
