The Brie de Melun AOP Xavier David is exclusively made from raw milk from the cows on the Pette family farm, which is right next to the cheese dairy. In terms of the production process, this exceptional cheese is manually ladled into moulds and decurdled with a traditional sabre. The expert cheesemakers do every step by hand here, from turning to salting to wrapping. The cheese is then ripened for 12 weeks in a natural cellar and delivered wrapped on a natural straw mat. All of this requires plenty of time and patience for a unique and authentic result. This cheese has a strong character and a bloomy rind speckled with orange to brick-red spots. Under its thin rind hides a straw-coloured paste that is chalky when young and creamy at its peak. Lactic flavours predominate in the mouth, with a slight touch of saltiness. This is a distinctive cheese with a stronger flavour than its brother, Brie de Meaux.
