The Brique Sakura No~Ha® goat cheese made from raw milk from herds of the Poitou region, in France. Its fabrication is totally artisanal and the whole raw milk comes from three highly self-sufficient goat farms. The goats graze on grass in the pasture from spring to fall and feed on hay in the winter. The cheeses are produced by traditional methods with artisanal processes (ladle moulding, manual dry salting, etc.). What makes this brick-shaped cheese particularly unique is the Japanese cherry tree leaf placed in the centre. This edible cherry leaf gives the Sakura a fruity aroma with flavours of Morello cherry and almond, while maintaining the characteristic flavour notes of goat’s milk. Sakura means “cherry tree” in Japanese, Japan’s most iconic tree! This cheese is discreet, playful and mild for up to 1 week of ripening. After that, its taste becomes bolder while still preserving its harmonious balance of flavours. Original and modern, a well-kept secret.
