Buenalba is a raw ewe‘s milk cheese that draws inspiration from Manchego production. Its milk comes from a selection of farms and villages in the Toledo province. The Buenalba Vino Blanco was created at the request of an American client who wanted a Spanish wine-flavoured cheese that wasn’t purple like Buenalba Vino Tinto. So, Artequeso began searching for a winegrower who produced white wine. Samuel Cano, an organic and biodynamic producer in Mota del Cuervo, macerates his Aíren white wine with grape skins in oak barrels. The skins are set aside and the wine is added to the milk to make Buenalba Vino Blanco, which is ripened up to six months.
