It is lightly pressed before beingnaged for two months during which time the rind is brushednevery three days. The drawing is graved to the rind after thisnaging process has been completed. Bufflonne des Crémiersnis smooth, creamy and, above all, mild. As all such productsnmade from buffalo’s milk it is a very healthy product. Withntwice the fat content of cow’s milk, buffalo milk containsn43% less cholesterol and is richer in minerals.
