Farmhouse product. This pressed cheese is made of 80% buffalos’milk and 20% cows’milk, produced at the same farm that feeds the animals. It is lightly pressed before being aged for two months during which time the rind is brushed every three days. The drawing is graved to the rind after this aging process has been completed. Bufflonne des Crémiers is smooth, creamy and, above all, mild. As all such products made from buffalo’s milk it is a very healthy product. With twice the fat content of cow’s milk, buffalo milk contains 43% less cholesterol and is richer in minerals.
