The cave’s humidity naturally helps to grow the Penicillium that gives the cheese a really powerful flavour. The long taste on the palate reveals aromas of caramelised onions, wild flavours and even walnuts. The cheese is rubbed with water from the spring that runs along the cave’s stalactites. All of these characteristics have enabled the cheese to win many awards worldwide.
