Gaperon is a cheese typical of the Auvergne-Rhône-Alpes region and has been in existence for over 100 years. The unique thing about this Gaperon, which comes from the Fromagerie des Pays d’Urfé cheese dairy, near Vichy, is that it’s made with ewe’s milk. It is flavoured with garlic and black pepper, which gives it a pronounced flavour. After ripening for 15 days to 3 weeks, it offers a very melty and creamy texture on the tongue.
