Semi-hard cheese made with cow’s raw milk. Limited 2021 Edition. This cheese has been created to celebrate 50 years of Jurassic, our limited-time product for the anniversary of this wonderful adventure. Continuing with the concept of combining 2 regional products, we are proud to present Gentianette, our digestive combination. During ripening, the wheels are rubbed twice weekly with gentian spirit. Gentian is a distilled spirit made from the fermented roots of the yellow gentian, a flower that grows in the mountains – and in the Haut-Doubs region in particular. Gentian spirit, known for its positive effects on digestion, has a characteristically powerful and persistent aroma of roots and earth. These same aromas are expressed in the cheese as well, giving it the unique and inimitable taste that makes this mountain cheese one of a kind. For this limited edition, we produced just 100 cheeses, available starting on 1st October 2021. If people like this cheese, we may continue to produce it while maintaining the ripening time.
