Holzhofer Extra Rezent is a semi-hard cheese, which matures for 12 to 16 months in a vaulted cellar. Its ivory-coloured paste is crumbly. It has a creamy texture and a strong, full-bodied, spicy taste.The Holzhofer Extra Rezent Cheese is produced on the Swiss farm “Holzhof”, in the village of Amlikon-Bissegg, between Frauenfeld and Weinfelden, in the canton of Thurgau. It has been run for 160 years by the Wartmann family, pioneers in sustainable development. The farm has been certified “CO2 neutral by Swiss Climate” since 16 August 2021 and the cheese dairy is the only one in Europe to have this certificate as well. Respect for animal welfare is also a priority. The 45 brown cows on the farm graze in the meadows in the summer and are fed with hay produced on site in winter.
