L’Affiné à la bière Chalancey

The “Affiné à la Bière” is a cheese matured with blonde beer that gradually develops delicate floral beer notes and takes on an elegant brown rind. During its 14-day aging process, it is carefully rubbed three times by the cheesemakers with a solution enriched with blonde beer and malt extract. This is what gives it its beautiful brown hue and helps bring out its full character.
