Its name is a nod to thenfamous traditional cheese makers “Maîtres-Armaillis” whonhave roamed the Fribourg Prealps since the 17th century,nleading the herds assigned to them from May, untilnSeptember. Dressed in the traditional armalli’s costume, theyntransformed the milk into cheeses, butters or creams.
