This semi-hard cream-based cheese is made exclusively from milk from the Gruyère region, then delicately ripened for 5 months until it reaches perfect maturity. L’Armailli de Gruyère is an extraordinary cheese made from an ancestral recipe passed down for four generations and updated for today’s tastes by the master cheesemaker. A subtle flavour and soft texture, combined with an appealing character, will delight all connoisseurs who love cheeses of exceptional quality and rare origins. Its name is a nod to the famous traditional cheese makers “Maîtres-Armaillis” who have roamed the Fribourg Prealps since the 17th century, leading the herds assigned to them from May, until September. Dressed in the traditional armalli’s costume, they transformed the milk into cheeses, butters or creams.
