L’Armailli denGruyère is an extraordinary cheese made from an ancestralnrecipe passed down for four generations and updated forntoday’s tastes by the master cheesemaker. A subtle flavournand soft texture, combined with an appealing character, willndelight all connoisseurs who love cheeses of exceptionalnquality and rare origins. Its name is a nod to the famousntraditional cheese makers “Maîtres-Armaillis” who havenroamed the Fribourg Prealps since the 17th century, leadingnthe herds assigned to them from May, until September.nDressed in the traditional armalli’s costume, theyntransformed the milk into cheeses, butters or creams.
