Mini format. Dairy production. The Mont d’Or AOP Affinage d’Excellence comes from the Guy Rième cheese dairy, a small alpine dairy in Haut-Doubs. The Mont d’Or Affinage d’Excellence is a traditional raw milk cheese, made as in former days, in copper vats. It is looked after and well cared for during its ripening period which lasts for at least 4 weeks. Its paste is creamy without being runny. It has a very noticeable taste of spruce and undergrowth. The Mont d’Or AOP Affinage d’Excellence can be enjoyed warm, although real cheese monger also eat it cold.
