Traditional production. This Mozzarella di Bufala made with buffalo milk differs from the others particularly in its taste. It is relatively mild with a hint of acidity. Its texture is not much fibrous and allows a clean cut with a very light milky liquid. Its melting and creamy heart, coated with a firm paste, will seduce all gourmets. This Mozzarella, specialty selected for us by Antonio Carpenedo, will blow you away with its quality. Antonio made the wise choice to propose a cheese, which is non DOP, but made 100% from very high quality buffalo milk, coming exclusively from a small farm of the area of Salerno, south of Naples.
