Created by our Master Cheesemaker. As the name suggests, Brebitruffe Bio is a cheese made with organic ewe‘s milk and summer truffles (Tuber Aestivum vitt.). It is produced in Spain’s Albacete province. Unlike most truffle cheeses, a truffle paste is injected into the cheese after it is made. Then it is ripened for four to six months. This method allows the cheese to develop its own character and a powerful aroma.
