Brie de Meaux AOP made with organic raw cow’s milk. Once it has been left to drain on bulrush mats, dry salted and dried in a ripening room, the cheese is stored in maturing cellars where it will spend between 4 and 8 weeks. It will be monitored and hand-turned once or twice a week. Seeing, as Dongé is known to be the most traditional manufacturer of Brie de Meaux, with this organic product, we can value the work of the farmers, protect the planet, and give the consumer a traditional and top quality product, all in complete transparency.
