


Organic Mimolette Isigny
This organic Mimolette is made only with milk from farms that offer not only the guarantees of the AB Organic Farming label but also the treasures of an outstanding terroir: the Isigny terroir. The maturing of these half-aged Mimolettes begins with a short stay in the drying cellar, a 6-week cycle during which the cheeses will bloom, i.e. become covered with a fine layer of mould on which the cheese-mite develops a very precious little chap, as he is responsible for undressing the rind to give it its lovely natural appearance. After 6 months maturing, these half-aged Mimolettes have a firm, hearty body, an orange-yellow colour and delicate milk flavours. They come as whole cheeses or in 200 g portions.
