Dairy production. The Ossau-Iraty AOP Affinage d’Excellence is produced exclusively from ewe’s milk in a small alpine dairy oriented toward sustainable development and located in the village of Iraty, in the Pyrénées, 1237 m in altitude. It is ripened for 6 to 8 months in traditional cellars. It has a typical taste which is not overwhelming. as well as rich fruity, hazelnut notes with a herbaceous finale. Its melt-inthe-mouth consistency makes it an exceptional product.
