This soft cheese speciality from the Pays dAuge innNormandy is supposedly the ancestor of the Pont lÉvêque,nbut double the size. Manufactured from raw milk andnhandmade, it matures for 3 to 4 weeks in damp cellars.nDuring this time, the rind is washed several times with saltnwater. The 5 to 6 cm high cheese is very smooth paste andnhas a hearty taste. It continues to ripen in its wooden box.
