Raclette Croccanta

“I love figs in all their forms – fresh, dried or even in a homemade chutney. As I was preparing my fig and nut chutney, it occurred to me that instead of just eating it with my favourite cheese like I usually do, I could use it as the basis for an entirely new product. We mix select fig seeds and a subtly flavoured nut oil into the cheese mass, just before placing the cheese in the salt bath to form the rind. After three months of ripening, the nutty aroma is fully developed and the fig seeds add a lively bit of crunch. The result is a truly new product with a surprisingly crunchy mouth feel. We’ve intentionally produced this cheese so that it can be eaten cold as a sliced cheese, but also tastes exceptionally good as a raclette.
