The Provence is known for its distinctive approach to life. It’s a place filled with pure colours and aromas, offering gorgeous landscapes for the eye and sumptuous flavours for the tongue. One particularly wonderful aspect of the region is its beautiful fields of lavender. Only true lavender (Lavandula angustifolia), the variety that we use in our cheeses, has that fresh, balsamicsweet herbal aroma with its unique wildflower notes. A Swiss mountain cheese that’s ripened for three month sand hand-tended every week deserves to be presented in unique garb.
