The distinguishing features of this Reblochon de Savoie AOP Fermier Xavier David is its unbelievably runny pâte. It is made using a 100 % authentic handmade production process, performed twice a day after each milking. By only using milk from Abondance cattle. And finally, by a perfectly controlled ripening process lasting at least 5 weeks during which time the cheeses are washed and turned over several times a week.
