The Valençay AOP Affinage d’Excellence is made from raw goat’s milk and covered with a bloomy, ashed rind. Its ripening lasts 2 to 3 weeks and distinguishes it from a classic Valençay. It has a creamier paste and a more pronounced goat’s milk flavour. Bluish-green moulds can develop on the rind: this is a sign of quality ripening.
