Blue di Capra is the first cousin of Gorgonzola Cremoso AlnCucchiaio, apart from the fact that it is 100% made of goat’sncheese. Blu di Capra is still produced using artisan methods,nmoulded on the shovel in order to create such a creamy,nsmooth mix, enabling it to be served on a ladle. The cheesesnare aged slowly in chilled cellars kept at around 4°C and forna minimum of 60 days. At first, you are going to bensurprised by this cheese’s incredible texture, but above all itsntaste, which is full-bodied and lively, without ever beingnaggressive.
