Inglewhite Buffalo is made with buffalo milk from Park Head Farm’s own water buffalo farm in Inglewhite, Lancashire. This is a rare and unique cheese. It is the only buffalo milk cheddar type cheese made in the UK. The cheese is wrapped in a muslin cloth: this traditional technique allows moisture to escape during the ripening process. This cheese is ripened for a minimum of six months to allow the flavours to develop. It has a delicate, creamy texture, similar to a young Manchego, and a mild flavour. For cooking, this cheese can be used in a variety of recipes in place of Parmesan, for example. It won the gold medal at the 2018 and 2019 World Cheese Awards.
