



Manchego Artesano DOP
Farmhouse product. Made with raw milk from the 200 ewes in the Finca Valdivieso flock, Manchego Artesano DOP is an exceptional farmhouse cheese. It is made 100% by hand, in the traditional way without additives or preservatives. It is matured in natural cellars, where it is also brushed and oiled. The semi-curado version is matured for a minimum of 60 days. Its acidity and salinity, with notes of silage and vegetal odour, give it nuanced flavours on the palate. The curado version is matured for a minimum of 6 months. It has a strong, full-bodied flavour, round and persistent on the palate. Finally, the anejo version is matured for at least 12 months. On the palate, it has an intense flavour without being spicy.
