30 months ripening. Limited Quantity. Comté Saint Antoine ripens, as its name suggests, 24-36 months in the fortress Saint Antoine, near to Pontarlier, at an altitude of 1000 m. This is undoubtedly the best cheese in its category and the aromas acquired during ripening are not only extraordinary and varied.It has a pronounced straw and hazelnut flavour.
