Have you heard of Banon? It’s a village in the Alps of upper Provence, but it’s also a cheese which was awarded Appellation d’Origine Contrôlée (Protected Designation of Origin) status on 23 July 2003. Made solely from raw, whole goat milk, Banon cheese is ripened while wrapped in brown chestnut leaves, which are tied in place with strands of natural raffia. The cheese has an attractive cream colour, with a creamy texture inside offering delivering all of the earthy aromas of the Haute Provence region, a blend of sweetness and strong flavours. The Banon that we offer comes from the Laragne-Montéglin artisanal cheese dairy, based in the Hautes-Alpes department, in the terroir of the Pays de Buëch, founded in 1993 by Pascal Fol. The cheese dairy specialises in the production of traditional cheeses made with raw milk and moulded with a ladle, particularly the celebrated Banon AOP cheese.
