Quick, discover Brebis d’Or, a new ewe’s milk cheese in the Moléson Signature range! This Swiss cheese from the Canton of Fribourg is made from ewe’s milk. When they take it out of the salt water bath, the cheesemakers wrap a strip of spruce bark around the cheese, then leave it in a cool, temperature controlled cellar for around ten days, while it develops a fine bloom. The strip of spruce bark gives it a slightly woody flavour, which goes beautifully with the mild taste of the ewe’s milk. A young Brebis d’Or has a soft texture. When the surface starts to yellow, it means that the cheese has ripened and that the paste is creamy, runny even. It can then be enjoyed at room temperature, on a slice of country bread – or even with a spoon if you’re a real food lover! It’s also excellent straight out of the oven. It can be baked in a dish with its strip of spruce bark still attached, for around twenty minutes at 160°C, then enjoyed with jacket potatoes.
