Gruyère AOP Alpage les Grand-Plats de Vent 2023

Seasonal product. Farmhouse production. For our Gruyère d’Alpage Moleson Sélection year 2023, we have selected the Alpage les Grands Plats de Vent. It is located in Le Brassus, about 1km from the French-Swiss border, at an altitude of 1,279 meters. Gilbert Magnin and Pierre-André Golay joined forces in 2005 to lease a vast 125-hectare mountain pasture. Together, they make six wheels of Gruyère d’Alpage PDO every day. Pierre-André’s daughter looks after the herd. The summer production offer the following organoleptic characteristics: Notes of gentian, lovely bitterness, Hard salted butter caramel flavor. The note is pungent on the finish, with acidity and freshness. Alpine pasture gruyère cheese is produced from late May to early September, the time when the dairy cows remain on the mountain pastures. Unlike other alpine pastures in the Fribourg region, of the Swiss Jura, the milk vats are not heated by wood fires. Instead, the water boiler is heated over a wood fire, and this water is used to heat the vat. As a result, these Swiss Jura alpine Gruyères often have a less pronounced smoky taste.
