This authentic gouda is made with liquid smoke added to the cheese during production. Creating this natural smoke flavour is quite a process. It starts with recycling sawdust and using it to create all-natural smoke by heating it in an oven. The cloud of smoke is then condensed. Harmful gases and solids like PAHs, tar and charcoal particles are filtered out. This purified condensate can be transformed into liquid smoke. The technique gives this soft, creamy cheese a subtle, natural smoke flavour. It is then ripened for one month. It is great in a burger, pairs well with savoury dishes and works perfectly for a summer salad when chopped into small cubes. It pairs well with a woody white wine like a Chardonnay or Pinot Blanc.
