Halloumi is a semi-firm cheese that has been produced on the island of Cyprus for centuries. It is the traditional Cypriot product, the most famous cheese of the island. It was approved as a PDO cheese in 2021, meaning that only cheese made in Cyprus according to the traditional recipe can be labeled and called Halloumi. The uniqueness of this traditional production is the addition of mint leaves between the layers of cheese, which act as a natural preservative but, most importantly, give it its distinctive flavour and freshness. One of the best qualities of Halloumi is its ability to retain its shape and texture when heated. Thus, it is an ideal cheese for grilling on a barbecue as it will remain firm without melting. Once cooked, it is characterised by its tender and soft interior and golden, slightly crispy exterior. Its flavour is rich and salty, with a slight tangy touch. A delight! In terms of taste, the two-milk version is more distinctive, creamier, and more indulgent that the 3 milks version.
