Manchego DOP Granja Artesano semi-curado
Farmhouse product. Made with raw milk from the 200 ewes in the Finca Valdivieso flock, Manchego Artesano DOP is an exceptional farmhouse cheese. It is made 100% by hand, in the traditional way without additives or preservatives. It is matured in natural cellars, where it is also rubbed with O-Med olive oil. The semi-curado version is matured for a minimum of 60 days. Its acidity, salinity and lactic notes give it a subtle complexity on the palate. The curado version is aged for at least 6 months. It offers a more pronounced flavor with hints of dried fruit and a firmer, slightly grainy texture.Finally, the añejo version is aged for a minimum of 9 months. On the palate, it delivers an intense flavor without being sharp.
