These delicious pressed cheese is made with ewe’s milk. Similar to Manchego, however it requires a different production process in which the flavours are injected in the form of cream over 40 000 times into the cheese for it to develop intense flavours during the ripening process. The cheese develops some pretty marbling. Taste the symbiosis between slightly sweet black olives and sheep’s aromas. Best enjoyed sliced thinly for the aperitif.
