It is made in vats, which requires the sage to be added at the start of the cheesemaking process. The result is a smooth-melting cheese that pairs equally well with fresh fruits, vegetables and poultry. This cheese has a long history: traces of Sage Derby have been dated to the 17th century, when the benefits of sage were first discovered. At first, this cheese was made to celebrate the end of the harvest, and Christmas as well. What are the benefits of sage? Sage contains antioxidants and rosmarinic acid, which are believed to have anti-inflammatory properties. Sage is often used to treat functional digestive disorders and excessive perspiration.
