Saint Sauveur des Basques

Getting its name from the chapel that overlooks the Irati artisanal cheese dairy, in the foothills of the western Pyrenees in Basque Country, Saint Sauveur is a soft cheese with a delicate, flavourful, smooth pâte. Its rind is slightly floral and reveals a silky, airy interior that highlights the pronounced flavours of the rich pastures of Basque Country.
