The Spécialité fourrée à la Moutarde de Meaux Tradition Émotion is a wonderful combination of the famous Brie cheese made from raw cow’s milk and the equally famous Meaux mustard. It is hearty and pleasant in the mouth. To produce this cheese speciality, a 1/3 matured Brie is halved and a mixture of mascarpone and mustard is added to the cheese. It is then left to mature for at least 28 days in cellars so that the seasoning can penetrate well. The result is a piquant, slightly bitter taste that harmonises wonderfully with the smooth texture of the matured Brie.
