The Vieille Louche was created by Sylvie at the Domaine des Ballifays. This cheese is a big hit and has won several awards, notably at the Concours International de Lyon, where it earned the Gold Medal in 2022. Its distinctive feature? It is extremely creamy and soft, and can be enjoyed both cold and hot. To enjoy it hot, Sylvie’s secret recipe is to make a hole in the centre of the cheese, pour in a bit of white wine, olive oil, and herbes de Provence, then bake it in the oven for 10 min. at 180°C. A real treat. The Domaine des Ballifays is a small-family owned cheese dairy in the heart of the Charolais hills.
