Appenzellerin® Elegant
With Appenzellerin®, the Appenzeller® cheese dairy has created a new cheese that clearly stands out from the existing range. With its round, pure and harmonious taste, it aims to seduce and please everyone. The strength of this cheese lies in its mildness and its discreet, slightly milky, floral and delicate aromas. It is less full-bodied and creamier, pleasant and well-balanced – a real seducer. The consistency of the cheese is slightly tighter and less fatty than standard Appenzeller®. During its maturing period of 3 to 5 months, Appenzellerin® Élégant is regularly brushed with a herb brine. The precise composition of this brine remains a wellkept secret. Aesthetically, Appenzellerin® Élégant can be recognised by its pink label on the cheese wheel. Its authenticity, with its production area strictly limited to the Alpstein and Lake Constance, is guaranteed by the casein label.
