Arpea de brebis

A ewe’s milk cheese with a drained curd and washed rind, Arpea is a unique cheese from Basque Country, both because of its texture and its flavour. Its light and melty interior reveals the character and richness of the ewe’s milk, gaining complexity with over four weeks of ripening.
