Respect for tradition does not exclude innovation ! This cheese is named after the inhabitants of Bar-le-Duc, the town near the cheese dairy. This triple cream cheese is skimmed by hand with a ladle. Its texture is almost speadable… A pure delight. The raw milk gives it a buttery taste and a hint of fresh cream. The filling with pieces of summer truffle (4.5% Tuber aestivum Vitt.) adds powerful flavour and a nice long finish.
