Brebitruffe Jurassic

Created by our master cheesemaker.As its name suggests, the Brebitruffe is a sheep’s milk truffle cheese. It is made in Spain in the province of Albacete. Unlike most other truffle cheeses, it is only after the cheese is made that a truffle paste (summer truffle, 0.3% Tuber Aestivum Vitt.)and truffle flavouring are injected into it. Then it is matured for a minimum of 4 months. This method allows the cheese to develop its own character and unique flavour.
