The combination of a buffalo milk cheese, smooth and creamy, and a fine layer of a subtle mixture of Italian summer truffles and cream. The smooth texture of buffalo cheese perfectly accentuates the delicious flavour of our Acqualagna truffle. For this recipe, which is the result of months of study, we have decided to set the quantity of truffle at 3.5%. These truffles originate from Acqualagna in the Marche region. The truffles used are harvested from June to November at the heart of the Gorge de Furlo nature reserve in the Apennine forests.
