It gets its striking orange colour from the natural colourant annatto, which is added when the milk is rennetted. The master cheesemaker cares for, sorts and selects the wheels by hand. During at least 12 months of ripening, its paste becomes firm and somewhat crumbly and develops notes of hazelnut. After 12 months, the Mimolette is racy and spicy. Ideal cheese with a colourful fresh salad, or as a side dish to a sandwich. This Mimolette was awarded the best cheese in the world for 2023 with a rating of 100/100 at the International Competition for Cheese and Dairy Products, Concours international de Lyon 2023, and won this title among 920 French and international entries.
