Création Fromi. This soft cheese with mainly acidic curdling is typical for the Burgundy region in which it is produced according to the best artisan tradition of hand-ladled Brillats Savarins. Every single cheese is carefully placed in the mould with a ladle and stuffed with a mixture of Mascarpone and truffles (2% bis 3% truffle). For its 6 days long ripening the cheese requires low temperatures in order to develop its microbial flora. It then presents a white to cream-coloured fuzz on the rind. A mild, smooth, melt-in-your-mouth cheese which one should enjoy at room temperature for the full taste experience. Its packaging in a wooden box ensures the perfect level of ripeness.
