Organic certification: FR-BIO-01. Traditional production. Blue cheese from the Causses region. Made from full-fat raw sheep’s milk from the Lacaune breed. Matured for 3 months in natural cellars. White paste, numerous wide veins with an intense blue color. Typical taste, balanced and long-lasting on the palate. The Penicillium Roqueforti blue mold comes from real rye bread baked with organic flour. Papillon is the last Roquefort producer that still makes its own rye bread.
