This cheese is exclusively produced at the Gennari farm from the Brune race cows’ milk which Tino the farmer is most proud of. He takes particularly good care of his herd of 150 Brune breed cows. This very special milk makes this Parmagiano Reggiano’s paste even softer. Even when it is old this Parmesan remains fruity.
