Vacherin Fribourgeois d’Alpage AOP
Seasonal product. Semi-soft cheese made with raw cow milk and matured for min. 3 months. Available from September to April. Only a few dozen families still produce Vacherin Fribourgeois d’Alpage using traditional methods. Our Master Cheesemaker, Vincent Christophe, has selected an exceptional alpine pasture for you: La Guignarde, located at an altitude of around 1,150 metres in the municipality of Corbières in the canton of Fribourg in Switzerland, at the foot of the LaBerra massif. It is renowned for its artisanal production of high-quality Gruyère d’Alpage AOP, where milk is processed on site during the summer season. In addition to producing Gruyère, the Brodard family also makes around ten wheels of Vacherin Fribourgeois during the alpine grazing period: limited production for exceptional quality.
