Dairy production. Seasonal product. The Beaufort is a member of the Gruyère family: in fact, it was called “the Prince of Gruyères” by Mr. Brillat Savarin. The Beaufort d’été AOP La Réserve des Crémiers is very appreciated for its fruity flavour and its creaminess, and is thus a cheese with a marked taste, without being overpoweringly strong. It maturs for 12 to 20 months and has small cracks in the paste, which are indicators for high quality. The flavour of this hard cheese is delicate and fullbodied.
