The whole world knows and loves this Italian hard cheese from the Italian region of Emilia-Romagna for its special, almost legendary taste. After the wheels are marked, they slowly ripen on wooden planks in the silent cellars, for at least one year. The wheels are turned and brushed several times each month. This allows the cheese to rehydrate, transform its texture and adding richness to its aromas. The younger the cheese, the more mellow and tender it is. After two years, it takes on notes of melted butter, along with citrus and dried fruit scents. Although crumbly and granular, it still melts in the mouth.
